Hearth and Soul: Chick'n and couscous

This one I wrote on my own many years ago when I was living in Colorado and poor as dirt. It is a filling, versatile dish that can serve as lunch or breakfast the following day. I ate this and a similar rice dish nearly everyday. And I'd forgotten about it! When I found it in my recipe card box I knew it was the one I wanted to share for the Hearth and Soul Blog Hop. BTW, eating this dish regularly plus walking a bunch, I lost 50 lbs. Think about it.

Chick'n and couscous

1 c. couscous

1 tbsp oil
1 c. White Wave "chicken" style seitan (or 1 c. chicken breast), cubed

1 tbsp minced garlic
1/2 c diced tomatoes
1/2 c. green onions (white parts. save green tops for garnish)
1/4 c. minced mushrooms

3/4 c water (or liquid from the seitan package)
pinch coriander
1 1/2 pinches sea salt
1 tsp chili sauce
1/2 tsp onion powder (optional)

1. Prepare the couscous (regular or Israeli) per the package directions. Set aside but keep warm.

2. Put the oil in a skillet and sautee the chicken until nearly cooked through and lightly browned on the outside.

3. Add liquid, coriander, sea salt, chili sauce and onion powder to the skillet. Bring to a boil. Once boiled, turn down the heat to medium and add in the veggies. Simmer for 10-15 minutes to let the flavors mesh and the sauce thicken some.

4. Serve chick'n by the spoonful over the couscous. Garnish with green onion tops cut on the diagonal.

50 lbs!? Nice. Well, I could eat couscous everyday, as it is...but all of your flavor additions...and the chicken or seitan sounds like a great meal. Yummy. Thanks for sharing with the hearth and soul hop this week, as well :)

I love couscous, but I literally have *one* recipe for it that I just make over and over. I'll have to give this one a go!

Well, I'm living in Colorado and am nearly as poor as dirt, so perhaps this is just the dish for me. Ciongrats on the weight loss, it must feel wonderful. Thanks for sharing your recipe with the Hearth and Soul hop.
