
This is one of my grandmother's recipes. She was an old fashioned, modern woman raising 5 kids and some of her best recipes were probably pulled right out of the newspaper. This one is a favourite with my family to this day. It's not figure friendly (despite the broccoli) but boy oh boy is it tasty. I'm sure it could be delightful if made with a homemade cream of chicken sauce or even sort of a mousse-y consistency but my grandma didn't rock that way. She was raising those 5 kids AND working as a home economics teacher. She's my hero. I think good 'ol home economics is a lost art, usurped by too many choices in the marketplace and "lifestyle" experts hocking their crappy made in China wares. Let's get down to basics, people.
Chicken (or Tofu) Divan
1 lb broccoli, steamed and cut into small pieces
3 chicken breasts, steamed and cut into small pieces
(if using tofu in place of the chicken, slice it into cubes)
1 can cream of chicken (or cream of mushroom) soup
1/2 c. mayo
lemon juice and curry powder to taste
1/2 c. shredded medium cheddar
1/2 c. bread crumbs
Sprinkle the broccoli in the bottom of a greased baking dish then sprinkle the chicken (or tofu) on top.
combine the cream of chicken (or mushroom) soup, mayo and curry powder in a small bowl.
Spread the soup mixture on top of the veggie and chicken (or tofu) layers.
Sprinkle the cheddar cheese over the casserole, then the bread crumbs
bake at 350 for 30 minutes

This sounds like a really tasty comfort food dish.
It could be made a little healthier without probably cutting down taste by much. I might give it a try - I think we have everything necessary at home and it sounds yummy.
